4 very ripe bananas.
3 eggs.
1/3 cup natural nut or seed butter.
1/4 cup melted coconut oil.
1/2 cup coconut flour.
1/4 cup flax meal.
2 teaspoons baking powder.

1/2 teaspoon sea salt.
2/3 cup walnuts and/or chocolate chips optional (I do 1/3 cup each).

Hey guys! this is a healthy and super yummy banana bread, I`ve always loved this bread but lately I decided to come up with a healthy versión of it and I`ve been loving it so far, hope you do too..

BANANA BREAD.
Ingredients:
-2½ cups of oats.
-8g of stevia.
-2 tsp of cinnamon.
-2 TBS of brown sugar (optional for extra sweetness).
-1 TBS of baking powder.
-4 or 5 ripe bananas.
-2 eggs.
-2 tsp of vanilla.
-1 TBS of olive oil.
-Raisins, nuts or shredded coconut optional.
In a blender, blend the oats until it has a flour consistency, then pour it into a bowl and add all the dry ingredients and mix. (if you choose to not add the brown sugar, add more stevia for sweetness).
In another bowl, mash the bananas and add the liquid ingredients, mix a little bit and then whisk until you no longer have big pieces of banana..
Mix dry ingredients with liquid ingredients and add any additional nuts or raisins or whatever you want..
Grease you baking pan if needed and pour the mixure. Bake at 350’F / 180′ C for an hour or 1:20 minutes until toothpick or knive comes almost clean. Enjoy..

En la licuadora, licuar la avena hasta que tenga una consistencia de harina y luego echar la harina en un bowl y mezclarla con los ingredientes secos. (Si escogiste no ponerle azúcar mascabado, agregar mas sobrecitos de stevia para que endulce.).
En otro bowl, machucar los plátanos y agregarle los ingredientes líquidos y luego mezclar con la batidora hasta que no haya pedazos grandes de plátano..
Mezclar los ingredientes secos con los líquidos y agregar pasas o nueces si se desea al gusto. Engrasar el molde para hornear si es necesario y hornear a 350′ F / 180′ C por una hora u 1:20 minutos, hasta que el palillo o cuchillo salgan casi limpios.

I don’t have much experience with high percentages of wholemeal flours in my loaves. But this is something that makes me happy because I have a new challenge. The method in the movie worked somewhat, but it’s not my favorite. A world of trials opens up for me and I hope to discover new things related to the nature of whole grains..
Formula:
Mix 117g water, 165g whole wheat flour, 3.7g salt cool down in the fridge for one hour then 10-12hour rest overnight at room temperature. Next day mix 140g water, 165g bread flour and let it rest in autoyse for one hour. Knead 30g + 30g sourdough starter for each dough. After 30mins. Add 3.7g salt in breadflour dough and knead until gluten network is well developed. After one hour rest laminate both dough together (the method is inspired by Full Proof Baking see her channel). Two coilfolds in next two hours then let it two more hours to rise. After 5 hours and half bulk (from sourdough inoculation), shaping and rest it in a cold fridge for 18hours. Baked next day as usual: 10-15 mins at 240 degrees C on baking steel with steam and 30 mins. at 210 degrees C without steam..

Ingredients:
1 cup (90g) Rolled oats.
3 cups (375g) All-purpose/Bread flour.
1/4 cup (80g) Maple syrup.
1 1/3 cups (320ml) Boiling water.
1¼ teaspoons Instant dry yeast.
1½ teaspoons Salt.
2 tablespoons (30g) Melted butter.
Directions:
1. In a large mixing bowl, or in the bowl of an electric mixer combine boiling water, oats, maple syrup, butter and salt. Mix and let cool slightly..
2. Add flour, yeast and stir until dough forms. Knead the dough for 7-8 minutes..
3. Place the dough in a lightly greased bowl, cover and let rise 1 hour, until doubled..
4. Gently deflate the dough, shape it into a log. Place the log in a lightly greased 9 x 5-inch loaf pan. Cover the pan, let rise for about 1 hour or it’s crowned about 1-inch over the rim of the pan..
5. Preheat oven to 350°F (175°C)..
6. Brush with water and sprinkle some rolled oats on top of the loaf. Bake for 40-45 minutes. If the bread appears to be browning too quickly, cover with aluminum foil for the rest of baking..
7. Let cool completely before cutting.
